Imagine yourself in a trendy neighbourhood in Los Angeles, California. You walk into your favourite local spot with a group of friends for a relaxing day-long brunch, maybe a few drinks, more than a few coffees. There’s a great throwback playlist on, featuring the likes of Ice Cube, creating serious 90s vibes. Now, pick the restaurant up and move it to bustling Ho Chi Minh City, Vietnam. Welcome to Bunker Bed, Breakfast and Bar.
Nestled down a small alley off the busy street of Dien Bien Phu, Bunker is a hidden brunch oasis serving some of the tastiest bites in Saigon and arguably the best coffee. Their signature iced salted caramel macchiato is a perfectly sweet holiday for your taste buds.
The first thing you may notice when walking into Bunker is that there isn’t any indoor seating. The entire restaurant is a small patio with about six tables and a small bar that opens into the kitchen, where you can see (and smell) the deliciousness happen. Lights are strung where you’d expect a roof to be. Large trees and a wall covered in ivy help make this hidden gem a true escape from Saigon’s concrete jungle.
Bunker conceptualized out of co-founders Tuan Le and Laure Chevallier’s struggle to find somewhere they could hang out with their friends, enjoying a lazy brunch. Tuan explains, “It all started because we wanted to create a place where we wanted to hang out, and we do. Basically, a space for ourselves.”
Bunker reflects Tuan’s childhood. His family moved to the United States when he was young, and the first street he lived on was Bunker Hill in Los Angeles, California. He remembers that it was a close community where neighbours were like family. He notes that, “There’s also a lot of love in LA food.” Bunker reflects this feeling.
Bunker plans to expand include indoor seating and an intimate venue to host small concerts and comedy shows later this year. “It’ll be open, so come and go as you please. Same vibe, very casual,” Tuan describes.
